Homemade scones burger

What have you guys had for dinner/lunch today? I was in the mood for something I eat maybe once a year, a burger! Of course I had to make it myself, then I can make a healthier version out of it, and I can add the vegetables I want!

I made the hamburger bread from the scones recipe I posted couple of days ago. By making scones, you don’t have to wait for hours for the bread to be done. I love that! Especially if you are really hungry.

So, scones here, and the burger is really simple.

Ingredients: (2 people)

* 400 grams of ground beef

* 1/2 dl. water

* spices you like

Put the meat in a bowl and add the water little by little. (You don’t want it to look like a meat porridge.) Use a fork and mix for about 3 minutes, add the spices you want and done. Really simple.

Heat up your pan, add a little bit of butter or oil, take a spoon full of the meet and form in our hand like a burger. Put in the pan and let it cook  for about 15 minutes. Depends how big/thick your burgers are. If you want to make sure they are done, just cut one of them in half, and check.

Cut the scones in two, and add cucumber, tomato, lettuce and cheese for example.

Gluten free scones

I’m usually not a huge fan of bread, but sometimes I get a real craving for it. Scones was on todays menu.

Ingredients:

* 1/2 dl. of coconut flour

* 3 1/2 dl. of gluten free flour

* 1 dl. of almond flour. (I didn’t have any almond flour left, so I only used gluten free flour)

* 2 tbs. of baking soda

* 1 drop of stevia or 1 tbs. of sukrin

* a dash of oil

* 2 1/2 dl. milk (Use Coconut Milk and some water if your lactose intolerant)

* A little bit of salt, oregano and basil.

Put all the dry ingredients in a bowl and mix. Add the dash or two of oil, milk and spices. Mix it together and add some milk if you think it is a little too thick.

The gluten free dough is usually really sticky. Put a spoon of dough on the baking sheet covered with baking paper. Use a plastic wrap to form the scones, so it doesn’t stick to your fingers.

Put them in a hot oven on 220 degrees for 12-15 minutes.

Sweet potato waffles with chicken

The other day I had no idea what to make for dinner. The only thing I had in my fridge was a tomato, chicken and sweet potato. Not a exciting meal if you ask me. Besides I really wanted waffles. Thats when it hit me, why not make sweet potato waffles? So I did!

Ingredients:

Waffle ingredients:

* 2 eggs

* 300 g. sweet potato

* 1 dl. milk (if you are alergic to milk, try coconut milk)

* 25 g. coconut flour

* 25 g. gluten free flour (or normal flour if you can eat that)

* 1 tbs. baking soda

* 1 tbs. quark

Chicken ingredients:

* spices you like. I had salt and pepper, oregano and basil.

* 2 chicken breast

* 1 big tomato

* 1/2 bell pepper

* 1/2 onion

* tooth of garlic

* quark

First cut the sweet potato and boil until soft. 15-20 minutes should be enough. Peel the potato and mash it with a fork or you can blend it. Now, put the rest of your waffle ingredients in a bowl and blend until it is a thick dough.

Find your waffle iron, if you don’t have that you can make pancakes. While you are making the waffles, cut the chicken breast and cook with some sliced tomato, pepper, onion and garlic.

When the waffles and the chicken are done, add a couple of tbs. of quark on the side.

Apple on the edge

Got this delicious recipe from @Mumselibabba.

This delicious apple and chili smoothie warms you up on any given chilly October morning.

Ingredients:

* 3 dl water

* 3 dl apple and mango juice

* 3 apples

* ½ frozen banana

* ¼ chili with seeds

* 2 tbsp hemp protein

* 2 tbsp dried mulberries

* 1 tbsp hemp seeds

* a pinch of freshly ground pepper

Put all the ingredients in a blender an blend until smooth! Put the smoothie in your glass and top with some slices apple!

Spicy lime mango with eggs

This was my breakfast today! What do you think? I can tell you it was delicious!

I don’t really need to list the ingredients. You can see all of them on the plate.

Putt some water to boil and leave your egg in there for as long as you like. I did 8 minutes.

While you are waiting for your egg to be done, cut your mango in two. Then again cut the half of your mango into small pieces and “turn it inside out” like you see in the picture. Spice it up with a little bit of salt, lime and chili. I used the mexican chili and lime spice, “tajin”, but I think you can only buy this in México.

Once the egg(s) is/are done, put it on your plate together with the mango and enjoy!

Chicken, hummus dinner

I wanted something super tasty today, so I made this.

Ingredients: (2 portions)

* 1 big tomato

* 2 chicken breasts

* 380 grams of chick peas

* 1 tooth of garlic

* lime juice from 1/2 lime

* 7-10 leafs of fresh basil

* spring onion or leek

Salt and pepper

Season the chicken breasts with some salt and pepper, and grill on the pan until they are fully cooked.

As your chicken is cooking, put all the following ingredients in the blender in order to make your hummus: the chick peas, lime juice, tooth of garlic and the fresh basil leafs. Blend until smooth. Taste it and add salt and pepper to your liking.

Slice the tomato and put half on each plate, and add some spring onion or leek on the top.

When the chicken is done; add it and the humus on your plate. Light a candle and enjoy your meal! 🙂

Gluten free lunch

Had  to eat something quick before school today, and chose this!

This is a gluten free bread I bought at DM in Germany! It’s full of fiber, and I’m gonna try to make it myself when I have time!

Put some

* dark green lettuce (better for you)

* bell pepper

* salmon

* tomato

* and top with some basil!

Add a little salt and pepper too if you like!

Healthy Frozen Fruit Delight

Got this recipe the other day from @nutriacure, and wow! It makes me SO hungry! Why don’t you try yourself?

Ingredients:

* 1 handful each of frozen blueberries, raspberries and strawberries

* 1/2 cup Organic greek yogurt

* a little almond milk to blend to your desired consistency

Blend all the ingredients together and serve!

 –> For non diary option, replace yogurt with a ripe frozen banana
For more sweetness, add a bit of stevia, agave or honey.

Juicy tomatoes

If you want a juicy tomato for dinner or lunch today, make this!

Ingredients: (2 people)

* 2 tomatoes

* 1 mozzarella cheese

* A big pinch of Feta cheese

* 1 tooth of garlic

* handful of spinach

* 7-10 leafs of fresh basil

Salt and pepper

Remove the top of tomato and use a spoon to take out the inside. Take what you just removed and put with all the other ingredients in a blender and blend until smooth. Put your newly made filling back in the tomatoes and put it in the oven on 200 Celsius for about 20 minutes!

Beet juice

Got this delicious recipe from @feelgoodfoodie (Instagram) , and it has to be shared with the world. It’s healthy, gives you energy, and looks good, so you are gonna have to try it!

Ingredients:

* 1 Large beet

* 1 cup red grapes

* 1 large cucumber

* 3 large carrot sticks

* 1/2 tbs shredded ginger root

Put everything in a blender until its juicy, fill up your glass and top with shredded coconut and cacao nibs!
